Our tips to help you keep your food preparation areas in tip top shape:
  • Have a cleaning schedule in place, make sure it’s displayed in a visible area, and stick to it religiously.
  • Have your fat trap cleaned regularly, by professionals, to avoid unpleasant odours, and to ensure it’s running at its optimum.
  • Train staff in the correct usage of equipment – for example, solids should never be put into a fat trap.
  • Regular scheduled cleaning of your kitchen canopy by professionals is a must – this is the most common cause of fire in an eatery.
  • Have a pest management plan in place. This needs to be rendered at a minimum of once a month, and documented, in order to meet The Department of Health’s requirements.
