Our tips help keep your food preparation areas hygienic:

Train staff in the correct usage of equipment – for example, solids should never be put into a fat trap
Have your fat trap cleaned regularly, by professionals, to avoid unpleasant odours and to ensure it’s running at its optimum
Have a cleaning schedule in place, make sure it’s displayed in a visible area, and stick to it religiously
Have a pest management plan in place. This needs to be rendered at a minimum of once a month and be documented, in order to meet The Department of Health’s requirements

Regularly scheduled cleaning of your kitchen canopy by professionals is a must – this is the most common cause of a fire in a restaurantÂ
